Did you know parsnips make delicious fries?! These oven baked fries are golden brown and seasoned to perfection. Parsnip fries make a tasty snack or side dish with a meal. They're extra delicious served with dijon aioli for dipping.
Preheat: Preheat oven to 450°F (230°C). Line one large baking sheets with parchment (see note 1).
Prep parsnips: Give the parsnips a good scrub in the sink (no need to peel them). Trim off the tops, then cut parsnips into thin shoestring-fries (about ¼-inch thick and 3-inches long).
Bake: Spread fries onto the prepared baking sheet. Drizzle with oil and toss to coat. Sprinkle with thyme, garlic powder, salt and pepper. Toss to mix. Arrange the fries so they're as spread out as possible (to encourage crispiness). Bake until golden brown, 25 to 35 minutes, flipping halfway through.
Season and serve: While the fries are hot, season with more salt, pepper, and thyme (to taste). Serve with Easy Vegan Dijon Aioli for dipping.
Notes
Baking sheets: You want plenty of space for the fries so they can crisp up (rather than steam) in the oven. Use the largest baking sheet you have - ideally a "half-sheet" size (18 x 13-inches or 46 x 33 cm). If you have smaller baking sheets, use two of them (you may need to reposition oven racks to the lower- and upper-thirds of the oven, and rotate sheets halfway through).
