Ingredients (and substitutes)
- Mayonnaise: A good store-bought mayo is our favorite way to "cheat" having to make an aioli from scratch. For a vegan/eggless option, substitute your favorite vegan mayo.

- Garlic Powder: Although sriracha already contains garlic, we like adding more to round out the flavor. In side-by-side taste tests, we preferred garlic powder over fresh garlic in this recipe. The garlic powder is less sharp and more crowd-pleasing. But, if you don't have garlic powder, you can substitute with fresh garlic instead.

Sriracha aioli is really versatile—it goes with almost anything! Here are our 4 favorite ways to use it:
1. Dip for fries
Sriracha aioli is delicious paired with crispy fries. And don't just limit yourself to regular fries...think: sweet potato fries, parsnip fries, avocado fries, broccoli fries, and even broccoli tots.
2. Burger / Sandwich sauce
A creamy sauce is always a good idea for burgers and sandwiches! Since this sriracha aioli isn't super spicy, it would be really delicious in our Chipotle Black Bean Burgers.

The recipe, as written, is not intended to make a super spicy sauce. We consider it a mild to medium spice level. But, you can easily adjust the amount of sriracha to taste. And remember: it's easier to start with less and add more, than go the other way around!

Yes, if you want a runnier sauce you can add a bit of fresh lime juice or water. Whisk until the sauce is your desired consistency. (Note: Lime juice will add a tangier/bright taste, which pairs well with sriracha, but is a slightly different flavor than the original recipe).
The first time you try this recipe, we recommend making it exactly as is. Then, thin it if you need. It's easier to thin the sauce than go the other way around.

Sriracha Aioli
Ingredients
- ¼ cup mayonnaise (see note 1)
- 2 teaspoons sriracha (adjust to taste, see note 2)
- ½ teaspoon garlic powder (see note 3)
Instructions
- Combine: Add mayonnaise, sriracha, and garlic powder to a small bowl. Whisk until smooth.
- Serve: Taste and add more sriracha/seasoning if needed. Serve.
Notes
- Vegan/eggless option: Substitute your favorite vegan mayonnaise.
- Sriracha: Adjust the amount of sriracha to suit your tastes. The recipe as written makes a mild to medium spiced aioli. Since sriracha already contains salt, we don't find it necessary to add more salt separately. But, if you use less sriracha, you may need to add a pinch more salt at the end. Taste and adjust as needed.
- Garlic powder: We found garlic powder added a milder, more crowd-pleasing garlic flavor. If you don't have any, you can substitute with ½ small clove of garlic, grated. Taste and adjust as needed.
- Storage tips: Refrigerate extra sauce in a sealed container, for up to 1 week.
