These Air Fryer Bell Peppers recipe has just 5 ingredients—including salt and pepper! Here's what you need:
- Bell Peppers: Use red, orange, or yellow bell peppers. Green peppers are unripe bell peppers. So, they taste less sweet and more bitter. Since green peppers are less popular with kids (and adults), we don't use them in this recipe.
- Olive Oil: Extra virgin olive oil works best for this recipe. But, in a pinch you could substitute grapeseed oil or another neutral vegetable oil. However, it'll have less flavor.
- Garlic: Fresh garlic really helps the flavors pop. You can use a garlic press if you have one. Otherwise, mince with a knife.

- Pat peppers dry: Use a kitchen towel to remove any excess water off the peppers after rinsing. This will help the olive oil coat the peppers better. And, it'll encourage them to roast rather than steam.
- Don't overcrowd the air fryer: Spread the peppers in a single layer in the air fryer basket, so they cook evenly. You may need to bake in batches if you're using a small air fryer or scaling up the recipe.
- You can re-use the same bowl: Consider adding the roasted peppers back to the same bowl you seasoned them in. This way, you'll use up every last drop of garlicky olive oil. And, you'll cut down on dirty dishes!

Air Fryer Peppers
Ingredients
- 2 large bell peppers (use red/yellow/orange bell peppers, about 1 lb/454g)
- 1 tablespoon extra virgin olive oil
- 1 clove minced garlic (see note 1)
- ¼ teaspoon fine sea salt (more to taste)
- black pepper (to taste)
Instructions
- Cut peppers: Cut 2 large bell peppers into ¾-inch (2 cm) strips. Discard seeds and stems.
- Season: In a medium bowl, mix 1 tablespoon extra virgin olive oil and 1 clove minced garlic. Scatter in peppers. Toss to coat. Sprinkle with ¼ teaspoon fine sea salt and toss.
- Air fry: Scatter peppers in a single layer in an air fryer basket. Without pre-heating, air fry at 400℉ (205℃) until the peppers are tender and browning at the edges, 11 to 13 minutes, shaking the basket half-way through (see note 2). Season with black pepper to taste, and more salt if needed. Garnish if desired (see note 3).
Notes
- Garlic: We suggest 1 small or medium clove of garlic (but adjust to suit your taste). If doubling the recipe, you can use 1 large clove of garlic or 2 small. You can use a garlic press, microplane, or knife to mince the garlic.
- Air fryer cook times: Air fryers vary by brand and style (e.g. basket vs. toaster oven). Adjust cook time as needed, until peppers are roasted to your liking.
- Garnish ideas (optional): Chopped parsley, other fresh herbs (such as basil or thyme), Parmesan cheese, crumbled feta, balsamic glaze, etc.
- Serving size: Varies based on what you serve it with. About 4 servings as a small side or 2 servings as a large side.
