Ingredients (and substitutes)

- Cherry or Grape Tomatoes: Use either cherry or grape tomatoes for this recipe. Cherry tomatoes are small and round. Grape tomatoes are more oblong. You can use loose tomatoes or tomatoes on the vine.
- Olive Oil: Use a high-quality extra virgin olive oil for this. If you're out of olive oil, you could substitute grapeseed oil instead. But it'll have less flavor.
- Garlic: Tomatoes and garlic are a match made in heaven! A garlic press makes it easy to mince the garlic without dirtying a cutting board. But you could use a knife instead.
Optional garnish ideas
These tomatoes are delicious without any extra garnishes. But, here are some herbs or seasonings you could add before serving.
- Fresh Herbs: Sprinkle the roasted tomatoes with your favorite fresh herb, like basil or thyme. Or try some finely chopped rosemary—but don't use too much because it's quite strong!
- Parmesan Cheese: You can sprinkle the roasted tomatoes with shredded cheese. Or use a vegetable peeler to shave larger pieces ("petals") off a block of Parmesan.
- Black Pepper: Freshly cracked black pepper has better flavor, so always grind it yourself if you can.

How to roast cherry tomatoes on vine
You can also roast cherry tomatoes with the vine still attached.
To do this, simply brush the oil and garlic onto the tomatoes. Then gently transfer to the air fryer basket. Everything else in the recipe stays the same.

Tips
- Pat tomatoes dry after rinsing: Use a clean kitchen towel to dry the tomatoes after rinsing them. This will help the olive oil stick to the tomatoes and encourage them to roast (rather than steam).
- Avoid overcooking: Cherry and grape tomatoes are juicy, sweet, and have tender skin. The air fryer softens them quite quickly. If you cook them too long at a high heat, they'll burst and lose most of their delicious juices! So, we prefer to roast them only until they start to shrivel and blister. This way you get to enjoy juicy roasted tomatoes in a fraction of the time.
- Serve in the same bowl: Add the roasted tomatoes back to the bowl you seasoned and toss them in. This way, they can soak up every last drop of olive oil and garlic. You'll minimize waste and create fewer dirty dishes.
- If scaling up the recipe: Remember to scatter the tomatoes in a single layer in the air fryer basket so they roast evenly. This may mean air frying in batches. If you're making a double batch, you could do one batch of loose tomatoes and another of on-the-vine for variety.
- Garnish if you'd like: You definitely don't need to garnish roasted tomatoes. But, you could serve with: flaky salt, freshly cracked black pepper, Parmesan cheese, or fresh herbs (like basil or thyme).

Air Fryer Tomatoes
Ingredients
- 1 clove minced garlic (see note 1)
- 2 teaspoons extra virgin olive oil
- 2 cups cherry or grape tomatoes (12 oz/340g, see note 2)
- ¼ teaspoon fine sea salt (more to taste)
Instructions
- Season tomatoes: If using loose tomatoes: In a medium bowl, stir together 1 clove minced garlic and 2 teaspoons extra virgin olive oil. Add 2 cups cherry or grape tomatoes and toss to coat. Toss with with ¼ teaspoon fine sea salt. If using tomatoes on the vine: In a small bowl, stir together 1 clove minced garlic and 2 teaspoons extra virgin olive oil. Use a pastry brush to gently brush the garlic oil all over 2 cups cherry or grape tomatoes (while keeping them on the vine). Sprinkle with ¼ teaspoon fine sea salt.
- Air fry: Transfer tomatoes to a single layer in an air fryer basket. Without pre-heating, air fry at 400℉ (205℃) until the tomato skins are wrinkling and some are blistering at the edges, 5 to 7 minutes. Season with more salt, to taste. Serve.
Notes
- Garlic: We recommend 1 small or medium clove of garlic; adjust to suit your taste. If doubling the recipe, you can use 1 large clove of garlic or 2 small. You can use a garlic press, microplane, or knife to mince the garlic.
- Tomatoes: You can use either cherry or grape tomatoes. The tomatoes can be loose or on the vine. Recipe instructions provided for both. If using on-the-vine tomatoes, make sure to handle them gently to avoid them falling off the stem.
