Ingredients (and substitutes)
You only need 4 ingredients to make this fresh beetroot and pineapple juice.
- Pineapple: You'll need one fresh pineapple for this recipe. Or, to save time you can buy pre-chopped in the prepared fruit/salad section of your grocery store.
- Beet: Beets are a great source of folate, vitamin C and magnesium. You only need one medium-sized raw beet. Beet juice can stain—but thankfully, you don't need to peel it for this recipe!
- Cucumber: Cucumber helps balance out the sweetness in the pineapple and beet. Use a whole English cucumber. Or, you could substitute 1 lb (454g) of mini cucumbers. No need to peel them.
- Ginger: A small knob of ginger adds even more nutritional benefits to this healthy juice. Ginger is slightly spicy, so if you don't enjoy the taste, simply leave it out.

Tips
- Skip peeling: Save yourself time and don't bother peeling the beet, cucumber, or ginger. The juicer will automatically separate the peel with the rest of the pulp. Do peel the pineapple though, because the skin is extremely tough and not tasty.
- Add ice: If you're enjoying this juice right away, consider serving it over ice. This will make the drink cold and refreshing. Alternatively, refrigerate the juice in a sealed container until cold.
- Make a double batch: If you're going through the effort of taking out your juicer, then you might as well make extra juice for later! Homemade juice can be stored in an airtight container in the fridge. It's best enjoyed within 24-48 hours.
- How to make this juice in a blender: If you don't have a juicer, you can still make this recipe. Instead, use a high speed blender to process everything. Then, strain using a nut milk bag or cheesecloth.

If you get beet stains on your hands, here's a trick to remove them! Wet your hands with water, then sprinkle a bit of baking soda (or salt) in the palms of your hands. Scrub your hands together, then rinse. Repeat if needed.

Beet Pineapple Juice
Ingredients
- 1 fresh pineapple, chopped (4 to 5 cups)
- 1 medium beet, chopped
- 1 English cucumber
- 1½-inch (3 cm) piece fresh ginger
Instructions
- Make juice: Run the pineapple, beet, cucumber, and ginger through a juicer (see note 1). Stir and enjoy immediately (see note 2).
Notes
- How to make this recipe without a juicer: Blend all the ingredients with as little cold water as is necessary to get the mixture moving. Strain pulp through cheesecloth or a nutmilk bag (note: the beet may dye the fabric pink).
- Serving suggestions: Serve over ice if you'd like the juice to be colder.
- Storage tips: Homemade juice is best enjoyed up to 24 to 48 hours. Store extra juice in an airtight container in the fridge.

I'm about to make my second batch. I used pure pineapple juice rather than pineapple cubes and it worked really well. Really delicious and I felt super healthy after having a glass!

Hi Sonya! Yay so glad you enjoyed it! I haven't tried freezing this specific juice, but I don't see why not. I've frozen other fresh juices before with much success. If you do choose to freeze it, just make sure your container is freezer safe and leave a bit of headroom in the container as it'll expand as it freezes. Hope this helps!
